For the fajitas, slice the onion, poblano and bell peppers into thin strips and mince the garlic. Heat a half a tablespoon of oil on a large pan on medium-high heat, and throw in the veggies. Add in the spices, and squeeze half a lime into the pan. Saute until the peppers and onion get slightly charred on both sides, tossing occasionally. ~15 mins
For the cilantro lime rice, cook the white or brown rice accordingly, and add the cooked rice to a large bowl. Add the finely chopped cilantro, lime juice, garlic powder, cumin, and salt to the bowl and mix to combine with the rice.
For the beans, combine all the ingredients in a small saucepan and bring to a simmer on medium heat, stirring occasionally.
Time to assemble the bowl! Add the cilantro lime rice, beans, and fajitas to the bowl and add your favorite toppings (basically just act like you’re at Chipotle).
