Vegan Cinnamon French Toast
Crispy on the outside and cinnamon-sweet on the inside, this vegan cinnamon french toast recipe is so simple yet unbelievably good. No one would know that no eggs or dairy were involved.

- ½ cup almond or oat milk
- 6 tbsp Just Egg
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
- Vegan butter or coconut oil for greasing
- 4 thick slices of bread

- Sliced fruit of choice (berries, bananas, peaches, etc.)
- Maple syrup
- Vegan butter
This recipe works best with slightly stale bread - leaving the bread bag open overnight will work! If you don’t have time, just pop the bread slices in the toaster for 2 minutes and let them sit to get slightly stale.
In a bowl, whisk together the vegan milk, Just Egg, vanilla extract and cinnamon with a pinch of salt. Pour the mixture into a baking dish so there’s a thin, even layer for the bread to soak in.
Place the slices of toast into the baking pan to soak in the mixture. Let the slices soak for at least 5 minutes, flipping halfway through.
Melt a little bit of vegan butter on a hot pan, then reduce the heat to low-medium. Using tongs or a fork, pick up the slices of toast and let as much of the excess mixture as possible drip off into the baking dish. Transfer the toast to the heated pan and pan fry until each side is golden brown and crispy - about 2 minutes on each side. You may want to add more butter to the pan and reduce the heat to low as you continue cooking.
Serve immediately with any sliced fruit of choice, maple syrup, and vegan butter!
