Vegan Cinnamon Apple Bread

This vegan cinnamon apple bread with fresh cut apples is everything you’d want for breakfast, and it’s super simple to make at the start of the week.

Ingredients
  

Dry Ingredients

  • 1 cup all purpose flour
  • ¾ cup oat flour
  • cup brown sugar
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt

Wet Ingredients

  • 1 cup unsweetend applesauce
  • ¼ cup maple syrup
  • ½ cup vegan butter at room temperature or coconut oil

Cinnamon Apples

  • 1 apple peeled and diced
  • 1 tbsp brown sugar
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350°F and grease the loaf pan with vegan butter. Make oat flour by grinding up 1 cup of oats in a blender.
  • In a bowl, coat the peeled and diced apple with 1 teaspoon of cinnamon and 1 tablespoon of brown sugar, then mix. Set aside.
  • In a large mixing bowl, combine all the dry ingredients. Add the wet ingredients to the bowl and mix until the wet ingredients and dry ingredients are barely combined. Lumps are okay.
  • Add the cinnamon apples to the bowl and roughly fold in the apples with the batter.
  • Pour the batter into the greased loaf pan and gently tap the bottom of the pan to make sure there are no air bubbles. Bake in the oven at 350°F for 45-50 minutes.
  • Do the toothpick test before removing from the oven, and let the bread cool completely before slicing or removing from the pan.

Notes

How long will it last? Thanks to no eggs or dairy, this bread will last you at least a week if left covered on the counter, or even much longer if kept in the fridge. The bread will most likely be gone by then, however.
