Quinoa Tabbouleh Salad

Fresh, herbaceous, and summery. This quinoa tabbouleh salad is the easiest tabbouleh recipe and uses simple, wholesome ingredients.

Ingredients
  

Produce

  • 1 large bunch parsley
  • 4-5 Persian cucumbers
  • 3-4 small tomatoes
  • 1 whole lemon juiced

Pantry

  • 1 cup cooked quinoa
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions
 

  • Finely chop the parsley and dice the cucumbers and tomatoes. Drain any excess juice from the diced cucumbers and tomatoes.
  • Thoroughly combine the quinoa, parsley, cucumbers, and tomatoes in a large bowl, and mix in the lemon juice and olive oil until the ingredients are well coated.
  • Add salt and pepper to taste, and serve!

Notes

Make it a meal! Tabbouleh is perfect to eat alongside my baked falafels. Top off with hummus and you have the perfect summer lunch!
