Quinoa Tabbouleh Salad
Fresh, herbaceous, and summery. This quinoa tabbouleh salad is the easiest tabbouleh recipe and uses simple, wholesome ingredients.

- 1 large bunch parsley
- 4-5 Persian cucumbers
- 3-4 small tomatoes
- 1 whole lemon juiced
Pantry
- 1 cup cooked quinoa
- ¼ cup olive oil
- Salt and pepper to taste
Finely chop the parsley and dice the cucumbers and tomatoes. Drain any excess juice from the diced cucumbers and tomatoes.
Thoroughly combine the quinoa, parsley, cucumbers, and tomatoes in a large bowl, and mix in the lemon juice and olive oil until the ingredients are well coated.
Add salt and pepper to taste, and serve!
Make it a meal! Tabbouleh is perfect to eat alongside my
baked falafels. Top off with hummus and you have the perfect summer lunch!
