No Bake Brownie Bites (Vegan and Gluten-Free)
Vegan and gluten-free, no bake brownie bites for anyone with a sweet tooth but not a knack for baking.

Servings 12 brownie bites
Remove the pits from the medjool dates. Soak the dates in warm water for at least 10 minutes if they're stale.
In a food processor with an S blade (see notes), process the walnuts into a flour or meal consistency. Add all other ingredients and blend into a chocolate dough mixture.
Taking about a tablespoon at a time, roll the dough mixture into small balls. If desired, roll the brownie bites over a very thin layer of extra cacao powder to lightly coat the outside. (Be sparse with the coating as it can be very bitter). Enjoy at room temperature or chilled in the fridge for up to 2 weeks.

Make it fancy: You can coat the outside of the brownie bites with powdered sugar, additional cacao powder, coconut flakes, hemp seeds, and more!
