Easy Vegan Gravy

A vegan gravy that's full of flavor and easy to prepare.

Ingredients
  

  • 4 oz crimini mushrooms
  • ¼ cup cashews
  • cup veggie broth
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp rosemary
  • ¼ tsp black pepper
  • Salt to taste

Instructions
 

  • Add all the ingredients to a small saucepan and bring to a boil. Reduce heat to and let simmer for 5 minutes.
  • Remove from heat and let cool for a couple of minutes. Then carefully pour the mixture into a blender and blend into a smooth gravy. Serve immediately or keep in the fridge in an airtight container for 4-5 days.

Notes

Pour it up: Use this gravy on the Creamiest Vegan Mashed Potatoes.
Blend it up: While I love my handheld blender, I recommend using a regular blender for this recipe. I use the Nutribullet, and it works perfectly! Get one here
Adjust the thickness: One of the great things about this recipe is that it's super easy to adjust. Prefer a thinner, runnier gravy? Just add more liquid. For a thicker, creamier gravy, add more cashews.m
