Total Time 40 minutes mins
Course Side Dish
Cuisine American
- 2 lbs Yukon gold potatoes or about 8 medium potatoes
- ½ cup oat milk or unflavored, unsweetened non dairy milk
- 4-5 tbsp vegan butter
- 2½ tsp salt or more to taste
- 1 tsp garlic powder
- ½ tsp black pepper
Thoroughly wash the potatoes and peel them if you prefer without the skin. Place potatoes in a large pot and fill up with water until they are about 1 to 2 inches submerged. Bring the water to a boil and cook until the potatoes are very soft and able to be pierced easily through with a fork. ~25 mins.
Drain the potatoes and add them in a large mixing bowl,or rinse and dry the pot and place them back in. Using a masher or large wooden spoon, start roughly mashing up the potatoes until each one is broken up. Mix in the oat milk, vegan butter, and spices until well combined with the potatoes.
Continue to mash and stir the potatoes until you reach desired creaminess/chunkiness. Alternatively, use an immersion blender towards the end to get creamy potatoes quickly. Taste and adjust the salt and pepper as needed, then serve!
