Vegan Cinnamon Apple Bread

Apples and cinnamon are a match made in heaven, and they certainly make for a heavenly combo in this vegan cinnamon apple bread. This loaf with fresh cut apples is everything you’d want for breakfast, and it’s super simple to make at the start of the week.

There’s nothing better in the morning than warm, cinnamon apple bread, especially when it’s as easy to make as this recipe!

 

This vegan cinnamon apple bread is so soft, moist, and fluffy – all with plantbased ingredients! No egg, egg replacer or milk necessary, and definitely no baking wizardry required. 

 

What makes this bread so good are the chunks of fresh baking apples coated in cinnamon brown sugar – just like in a warm apple pie. Yumm!

 

I like baking this comforting loaf on Sunday so that I can enjoy it for breakfast for the rest of the week. But be warned: you’ll tell yourself this vegan cinnamon apple bread will last you the whole week but trust me, the loaf will nearly be gone after one day (even if you live alone!).

How to Make Vegan Cinnamon Apple Bread

Dry Ingredients

1 cup all purpose flour

¾ cup oat flour

⅓ cup brown sugar

1 tsp cinnamon

2 tsp baking powder

1 tsp baking soda

Pinch of salt

 

Wet Ingredients

1 cup applesauce unsweetened

¼ cup maple syrup

½ cup vegan butter at room temperature (or coconut oil)

 

Cinnamon Apples

1 apple peeled and diced

1 tsp cinnamon

1 tbsp brown sugar

Prep ingredients. If you’re using vegan butter, make sure to first leave it out for at least one hour before baking to give it enough time to soften. Coconut oil or a neutral flavored oil like canola works well too. 

 

Preheat the oven to 350°F and grease your loaf pan. If you don’t have oat flour, make it at this point by grinding up 1 cup of oats in a blender. 

 

Make the cinnamon apples. First peel and dice the apples into small cubes. Any type of your favorite apple will work in this recipe – granny smith, fuji, red delicious, etc. (Here, I’m using fuji!).  Add the apples to a bowl, then toss in 1 teaspoon of cinnamon and 1 tablespoon of brown sugar. Mix to thoroughly coat the apples.

Make the batter. In a large mixing bowl, combine all the dry ingredients (1 cup of all purpose flour, ¾ cup of oat flour, ⅓ cup of brown sugar, 1 teaspoon of cinnamon, 2 teaspoon of baking powder, 1 teaspoon of baking soda, and pinch of salt). 

 

Next, add the wet ingredients (1 cup of unsweetened applesauce, ¼ cup maple syrup, and ½ cup of vegan butter or oil) to the bowl, and mix until the wet ingredients and dry ingredients are barely combined. Lumpy batter is okay!

 

Add the cinnamon apples to the bowl and roughly fold in the apples with the batter. Pour the batter into the greased loaf pan and gently tap the bottom of the pan to make sure there are no air bubbles. 

 

Bake in the oven at 350°F for 45-50 minutes, and do the toothpick test before removing. Once a toothpick comes out clean in the middle, remove from the oven and transfer to a cool surface. 

 

Make sure to let the bread cool down completely before slicing or removing from the pan. 

 

Keep it covered on the counter for up to a week, or keep it in the fridge for even longer – but most likely the bread will be eaten up by then.

Instructions
 

  • Preheat oven to 350°F and grease the loaf pan with vegan butter. Make oat flour by grinding up 1 cup of oats in a blender.
  • In a bowl, coat the peeled and diced apple with 1 teaspoon of cinnamon and 1 tablespoon of brown sugar, then mix. Set aside.
  • In a large mixing bowl, combine all the dry ingredients. Add the wet ingredients to the bowl and mix until the wet ingredients and dry ingredients are barely combined. Lumps are okay.
  • Add the cinnamon apples to the bowl and roughly fold in the apples with the batter.

Notes

How long will it last? Thanks to no eggs or dairy, this bread will last you at least a week if left covered on the counter, or even much longer if kept in the fridge. The bread will most likely be gone by then, however.
