Chipotle Sofritas Recipe

Chipotle is one of the first chains to offer a permanent vegan protein with its iconic sofritas. Loved by vegans and non-vegans alike, Chipotle sofritas offers a smokey, spicy protein to your bowls or burritos, and now with this recipe, you can recreate it yourself at home in as little as 15 minutes!

I know what you’re thinking – why would you go through the trouble of making sofritas yourself when you can easily go to any Chipotle and order it there? 

 

Well, why do we bother making anything ourselves when there are drive-thrus and food delivery? 

 

Making meals at home not only means saving money, but it also means that we control every single ingredient that goes into what we make, down to the salt and oil used. This usually means a much healthier outcome. For instance, even though Chipotle has a rep for being one of the healthier “fast food” options, a sofritas burrito bowl can easily be over 1,000 calories

 

(And not to mention the added relief that cooking at home provides from not having to worry about food handling during the time of a pandemic).

 

Plus, it’s really satisfying to know you can make something yourself that’s identical to the original!

Chipotle Sofritas Recipe

A Chipotle sofritas recipe that's identical to the original! You can make delicious, smokey sofritas at home in as little as 15 minutes.

Ingredients
  

Protein

  • 2 blocks of 8 oz super firm tofu (16 oz total) see notes
  • ½ tbsp avocado oil

Chipotle Sauce Marinade

  • 14.5 oz can of roasted diced tomatoes
  • 1 medium-sized poblano pepper
  • 2-3 chipotle chilis in adobo sauce from can (2 - Chipotle; 3 - spicy)
  • 2 tbsp chipotle adobo sauce from can
  • ¼ medium-sized brown onion
  • 1 tsp cumin
  • ¾ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Instructions
 

  • For the marinade, add all the ingredients into a food processor or blender and blend into a smooth sauce.
  • On a large pan, heat a small amount of oil on medium-high. Break up the super firm tofu with your hands into various sized crumbles and add to the pan. Saute the tofu for 3-5 mins.
  • Reduce the heat to low-medium. Add the chipotle sauce mixture (about 2 cups) to the pan and mix with the tofu until well coated. Let the tofu marinate in the sauce for 5 mins, stirring occasionally.
  • Use in homemade burritos, tacos, or bowls and enjoy!

Super Firm Tofu Your tofu should have almost no moisture inside, like this. If you can’t find super firm tofu, then invest in a tofu press that will squeeze out all the water.
