Vegan Cinnamon French Toast

Crispy on the outside and cinnamon-sweet on the inside, this vegan cinnamon french toast recipe is so simple yet unbelievably good. No one would know that no eggs or dairy were involved. 

There are some vegan foods that are so rare, you almost have no choice but to get it when you come across it. Vegan french toast for me is one of those items that I will order 9 times out of 10 if I see it on the menu. 

(Other must-order foods for me are vegan chicken sandwiches and vegan cheesecake – in case you were wondering). 

There’s just something so magical about french toast that pancakes and waffles don’t have. They are crispier and pack way more flavor than just maple syrup and butter. 

And I don’t know about you, but vegan french toast is definitely a rare sighting for me at most breakfast spots, which is why I had to come up with a super easy, vegan cinnamon french toast recipe to make at home!

Best vegan egg substitute

If you didn’t already know, french toast is made by soaking thick slices of toast in an egg yolk and milk mixture. 

Because this is a vegan food blog, and because the options for plant-based milk are unlimited these days, the main challenge here is finding a good substitute for eggs. 

Other vegan french toast recipes I’ve seen use chia and flax seeds as a substitute for the eggs. While I am all for whole food options and I think chia and flax seeds are egg-celent replacements, I don’t think they make for the best option for french toast. 

Chia and flax eggs do a great job at acting as a binder in baked goods, but in the case of the french toast where eggs are supposed to act as a coating for the toast, it just doesn’t make sense to use seeds for this purpose and expect the same results. 

This is where Just Egg comes in! 

Just Egg is a plant-based egg alternative made from mung beans that you can get at most grocery stores including Whole Foods. It’s meant to scramble and taste just like real eggs – and it truly does!


Seriously, if you’ve never tried it before, prepare to be amazed. It’s certainly the best substitute for eggs on the market, especially for recipes like this. I wouldn’t necessarily use it for making vegan scrambled eggs all the time as it’s pretty pricey for that and I personally am satisfied with a good tofu scramble, but for recipes like french toast I think no other substitute comes close.

How to make Vegan Cinnamon French Toast

First off, the laws of french toast declare that using stale bread is necessary to get the best results. I think stale bread soaks up the egg mixture better. 

If you’re planning on making french toast in the morning, just leave the bread bag open the night before and the bread should get stale enough. If you forget – no worries! Just pop the slices in the toaster for 1-2 minutes and let it sit for a couple minutes to get slightly stale. 

Once you have your stale bread, whisk to combine ½ cup of plant-based milk, 6 tbsp of Just Egg, 1 tsp vanilla extract, 1 tsp cinnamon, and a pinch of salt in a bowl. (Couldn’t be easier!)

Pour the mixture into a baking or casserole dish so that there’s a thin, even layer for the slices of bread to sit in. Let the slices soak in the mixture for at least 5 minutes, flipping halfway through so both sides are soaked.

Melt some vegan butter on a pan then reduce the heat to low-medium. Using tongs or a fork, pick up one of the slices from the dish and let the excess egg mixture drip off before placing the slice onto the heated pan. 

Cook for about 2 minutes on each side or until they are golden brown, then transfer to a large plate. Repeat the process for all the slices of bread. Similar to cooking pancakes, it’s a good idea to keep greasing the pan with vegan butter for every slice and to reduce the heat as you continue to cook. 

Serve the vegan cinnamon french toast immediately with chopped fruits of choice (here, I use strawberries and blueberries, but you can also use bananas, peaches, etc.), then top off with maple syrup and butter! 

This recipe is so incredibly delicious and you can’t even tell it’s vegan. Just another example of how easy it can be to veganize your favorite dishes from home!

Vegan Cinnamon French Toast

Ingredients
  

  • ½ cup almond or oat milk
  • 6 tbsp Just Egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt
  • Vegan butter or coconut oil for greasing
  • 4 thick slices of bread

Toppings (optional)

  • Sliced fruit of choice (berries, bananas, peaches, etc.)
  • Maple syrup
  • Vegan butter

Instructions
 

  • This recipe works best with slightly stale bread – leaving the bread bag open overnight will work! If you don’t have time, just pop the bread slices in the toaster for 2 minutes and let them sit to get slightly stale.
  • In a bowl, whisk together the vegan milk, Just Egg, vanilla extract and cinnamon with a pinch of salt. Pour the mixture into a baking dish so there’s a thin, even layer for the bread to soak in.
  • Place the slices of toast into the baking pan to soak in the mixture. Let the slices soak for at least 5 minutes, flipping halfway through.
  • Melt a little bit of vegan butter on a hot pan, then reduce the heat to low-medium. Using tongs or a fork, pick up the slices of toast and let as much of the excess mixture as possible drip off into the baking dish. Transfer the toast to the heated pan and pan fry until each side is golden brown and crispy – about 2 minutes on each side. You may want to add more butter to the pan and reduce the heat to low as you continue cooking.
  • Serve immediately with any sliced fruit of choice, maple syrup, and vegan butter!
