No Bake Brownie Bites (Vegan and Gluten Free)
For those of you with a sweet tooth but not a knack for baking, this is the recipe for you. These no bake brownie bites are gluten-free, healthy, and easy to make with a few simple ingredients.ย
No bake brownie bites are perfect for traveling or for keeping in the fridge whenever the sweet cravings kick in. They’re an easy vegan and gluten free dessert to have on hand that you don’t have to feel guilty about.ย
Baking has never been my forte, and despite my name, Iโm much more of a salty than a sweet fan. Still, I appreciate a good brownie, and if I can make them without ever having to turn on the oven, Iโm all for it.ย
How to Make No-Bake Brownie Bites
First, remove the pits from the Medjool dates. You do NOT want a pit ending up in your food processor. If your dates are a bit stale or if theyโve been in the fridge or freezer, soak them in some warm water for at least 10 minutes beforehand.ย
Next, throw the walnuts in the food processor and blend into a flour or meal consistency.ย
Then, add all the other ingredients to the food processor and pulse into a chocolatey dough mixture. You may have to stop and scrape the sides with a spoon occasionally.ย
Taking one tablespoon at a time, roll the mixture into small brownie balls. Set them on a plate or sheet lined with parchment paper to avoid sticking.ย
Optional Roll the brownie bites in a very thin layer of cacao powder sprinkled on your work station to lightly coat the outside. Cacao powder is bitter so use sparsely as a coating (lighter than pictured). You can also add coconut flakes or hemp seeds.ย
Chill in the fridge for 20 minutes to set or serve immediately. These no bake brownie bites can stay good in the fridge for up to 2 weeks.ย

Ingredients
- 10-12 Medjool dates pitted and soaked if needed
- 1ยฝ cup walnuts
- ยผ cup cacao powder plus extra for coating
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- ยผ tsp salt
Instructions
- Remove the pits from the medjool dates. Soak the dates in warm water for at least 10 minutes if they're stale.
- In a food processor with an S blade (see notes), process the walnuts into a flour or meal consistency. Add all other ingredients and blend into a chocolate dough mixture.
- Taking about a tablespoon at a time, roll the dough mixture into small balls. If desired, roll the brownie bites over a very thin layer of extra cacao powder to lightly coat the outside. (Be sparse with the coating as it can be very bitter). Enjoy at room temperature or chilled in the fridge for up to 2 weeks.
