Veggie Fajita Bowl with Cilantro Lime Rice
Rice and beans are a staple meal for any diet on any budget, and when you’re stuck on what to make for dinner, it’s the vegan go-to. Spice up your staple with this veggie fajita bowl recipe with cilantro lime rice.
Having a variety of rice bowl recipes in your repertoire will make figuring out your daily meals so much easier, especially for busy families or individuals who want to meal prep. This fajita bowl is perfect for when you’re in the mood for some Mexican food flavor but still want to keep it extremely healthy!
Veggie Fajitas
Fajitas are the most delicious way to inject much needed color into your meals and get in loads of vitamins. (If you saw my shishito pepper recipe, you’ll know that peppers contain more vitamin C than an orange!)
While we all know that it’s so important to eat the rainbow on a vegan diet, different colored peppers have slightly different flavor profiles. Green bell peppers are the least sweet, while red bell peppers are the sweetest. Orange and yellow bell peppers are on the sweeter side, but not as sweet as red.
Any peppers you choose will be great in this recipe, but note that I mix in a poblano pepper because poblanos have a slightly higher kick than bell peppers, which have no heat all.
But don’t worry – your fajitas won’t be spicy at all even with a poblano thrown in the mix.
Customized Toppings
The main elements of this recipe are of course the veggie fajitas, beans, and cilantro lime rice, but the toppings are where you can have some fun.
Some toppings to include that you can either make or buy premade are:
- Salsa
- Guacamole (mashed avocado, cilantro, lime juice and salt)
- Roasted corn (I get mine frozen from Trader Joes and pop it in the toaster oven)
- Lettuce or salad mix
- Pickled jalapenos
- Vegan cheese (here I use Violife Feta Cheese)
- So much more!
Best thing you can do is pretend you’re in line at Chipotle and get inspired by the toppings you would usually order!
Veggie Fajita Bowl with Cilantro Lime Rice
Ingredients
Veggie Fajitas
- 1 poblano or green bell pepper sliced
- 1 red bell pepper sliced
- ½ white onion sliced
- ½ lime juiced
- 1 clove garlic minced or ¼ tsp garlic powder
- ¼ tsp cumin
- ⅛ tsp salt
- ⅛ tsp black pepper
Cilantro Lime Rice
- 2 cups cooked white or brown rice
- 3 tbsp cilantro finely chopped (about ⅓ bunch)
- ½ lime juiced
- ½ tsp salt
- ¼ tsp garlic powder
- ¼ tsp cumin
Mexican
- 1 can black beans
- ¼ tsp oregano, cumin, garlic powder, salt, and pepper each
Toppings
- Roasted corn
- Salsa
- Lettuce or salad mix
- Avocado or guacamole
- Vegan cheese
Instructions
- For the fajitas, slice the onion, poblano and bell peppers into thin strips and mince the garlic. Heat a half a tablespoon of oil on a large pan on medium-high heat, and throw in the veggies. Add in the spices, and squeeze half a lime into the pan. Saute until the peppers and onion get slightly charred on both sides, tossing occasionally. ~15 mins
- For the cilantro lime rice, cook the white or brown rice accordingly, and add the cooked rice to a large bowl. Add the finely chopped cilantro, lime juice, garlic powder, cumin, and salt to the bowl and mix to combine with the rice.
- For the beans, combine all the ingredients in a small saucepan and bring to a simmer on medium heat, stirring occasionally.
- Time to assemble the bowl! Add the cilantro lime rice, beans, and fajitas to the bowl and add your favorite toppings (basically just act like you’re at Chipotle).
