Vegan BLTA sandwich with Tofu Bacon, Tomato, Lettuce, and Avocado

Vegan BLTA Sandwich with Tofu Bacon

For quick lunches on the go, sometimes a sandwich is just what the doctor ordered. This vegan BLTA sandwich with tofu bacon recipe will be your new favorite thing to throw together for lunch.

Back when I wasn’t vegan, I had a world of possibilities when it came to sandwiches: egg salad, turkey bacon club, cold Italian sub, salami and provolone, etc.

Now, I literally see vegans eating sliced cucumbers and hummus between two Ezekiel slices of bread and calling it a sandwich… (Don’t get me wrong, I’ve been there and done that, and it can be great when you have really good hummus!)

Let’s get back to our roots and enjoy some of the sandwiches we used to love.

BLT (bacon, lettuce, and tomato) is a classic, but BLTA (avocado) is even better. This sandwich can easily be made vegan – I mean, 75% of its name is veggies! – and you can make it at home for pretty cheap.

Tofu Bacon Recipe

For tofu bacon, it’s best to use super firm tofu – and I mean super firm. The tofu should be denser than any other tofu and should have barely any water.

If you’re having trouble finding super firm tofu at the store, then I highly recommend you invest in a tofu press. Tofu presses get all the water out of any block of tofu so the tofu can soak up any other marinade you add to it.

You may have noticed a lot of vegan bacon recipes going viral lately. There are recipes for carrot bacon, rice paper bacon, eggplant bacon…and even banana peel bacon?!

Basically, you can make crispy bacon out of anything as long as you have the marinade right.

Note that although this recipe has a smoky, sweet marinade, this tofu bacon is not like some of the more adventurous bacon recipes online. The goal with my recipe is not to end up with super thin and crispy bacon strips, but to easily achieve a bacon ham flavor with tofu to be able to add good protein to our sandwich. And this recipe does just that!

Make a big batch of the marinated tofu slices, and keep them in the fridge for a quick, vegan BLTA sandwich assembly, or add the tofu bacon to any rice bowl or salad!
