This vegan, one pot Mediterranean pasta is the best lunch or dinner for busy families since it only takes 15 minutes to make – AKA the time it takes to boil the pasta!

 

If you love robust Mediterranean flavors like I do, then this recipe will quickly become a weekly go-to. Basil, olives, artichokes, and sundried tomatoes compliment each other beautifully and provide a rich combination of salty and sweet. 

 

Since this recipe utilizes mostly jarred and marinated ingredients (olives, artichokes, sundried tomatoes), these do most of the heavy lifting in infusing the pasta with flavor without any need for additional oil or sauce. The only thing you have to do is boil some pasta and chop up the ingredients! 

 

Pro-tip: get the jarred ingredients from Costco or any wholesale club! Gigantic jars of olives, artichoke hearts, and sundried tomatoes from Costco cost the same amount as the tiny jars from regular grocery stores, and they keep in the refrigerator for months and months! As long as I have those three things in my fridge and pasta in my pantry, I know there’s no excuse not to make dinner. 

 

One pot Mediterranean pasta is perfect to bring to work or school since you can eat it hot, cold, or even room temperature. It’s also excellent for families, potlucks, and parties since you can make it in large quantities and, well, people like pasta!

One Pot Mediterranean Pasta

15 minutes, one pot - dinner has never been easier! This pasta is PACKED with Mediterranean flavors and is the perfect meal for busy families or anyone looking for a good vegan meal prep.

Ingredients
  

  • 8 oz penne or fusilli pasta (see notes for high protein option)
  • ½ cup marinated artichoke hearts
  • ½ cup sundried tomatoes
  • ½ cup olives
  • 2 tsp tomato paste
  • 1 cup fresh basil leaves
  • 1 cup spinach
  • ¼ tsp garlic powder
  • ¼ tsp chili flakes
  • Salt and pepper to taste

Instructions
 

  • Boil pasta according to directions on the box.
  • While the pasta is boiling, roughly chop the olives, artichoke hearts, sundried tomatoes, spinach, and basil into smaller bite sized pieces.
  • Combine the chopped ingredients in a large mixing bowl (including any drips of marinade left over), then add all the spices and tomato paste. Mix together until thoroughly combined.
  • When the pasta is done cooking, drain and add pasta to the mixing bowl. Toss to combine all ingredients with the pasta.
  •  Always taste test and add more salt and pepper if needed, then serve! Can be served hot or cold.

Notes

Where’s the protein? I always use lentil or chickpea pasta (like the Banza brand) for this recipe, as it has up to 23g of protein per serving!
