Figs and cheese are a match made in heaven, and now vegans can experience this sweet combo for breakfast. This fig and vegan cream cheese toast is a simple way to feel fancy at home. 

 

Easy toasts like this are an amazing way to switch up your normal routine with combinations you may not have thought of before. With just 5 easy ingredients – all of which I got at Trader Joes, you can feel like you’re having brunch at a trendy cafe in Los Angeles.

Health Benefits of Figs

If you’ve never had a fig before, what are you waiting for! Figs are super sweet and are soft with lots of texture from the seeds in the middle. Not only are figs probably the most photogenic fruit, they are also so good for you. 

 

Figs are brimming with important nutrients and antioxidants. Because they taste as sweet as they do, it’s amazing to think they are actually healthy!

 

High in antioxidants

 

Figs are high in antioxidants due to their high polyphenol content. As we know, antioxidants are imperative for fighting against free radicals, which damage the cells in our bodies. 

 

Polyphenols are packed with antioxidants. In fact, studies show that figs have higher amounts of polyphenol than even green tea and red wine. 

 

Good for bone health

 

Milk is said to build strong bones, but so do figs. A half a cup of figs has nearly the same amount of calcium as a half a cup of milk! They also have magnesium which is another mineral important in bone health. 

 

Not only do figs contain calcium and magnesium, they also contain a compound called strontium. Strontium is used to treat osteoporosis in postmenopausal women. 

Since figs are in season in late summer to fall, take advantage of them while you can!

Vegan Cream Cheese

There are so many vegan cream cheese options on the market, and to be honest, I haven’t come across a bad one yet! 

 

Violife, Myokos, Kite Hill, Trader Joes, Kroger, and more all have their own vegan cream cheese. Even the O.G. vegan cream cheese from Tofutti nails the texture of cream cheese without that overwhelming “vegan” taste. 

 

Just go into the vegan section at your local grocery store (probably next to the other dairy and deli products), and you’re sure to find some great options. Most of those brands even carry different flavors of cream cheese, as well.

Amazing Microgreens

This fig and vegan cream cheese toast wouldn’t be complete without the topping of microgreens. In fact, I would say no toast – avocado and hummus toasts, alike – would be complete without a generous topping of microgreens! 

 

Microgreens are seedlings of various vegetables and herbs, and they are often used in, again, fancy cafes and restaurants to top off various dishes. You can get broccoli microgreens, lettuce, radicchio, fennel, dill, and more. Not only do they offer an aesthetic finish to dishes, but they are also packed with even more nutrients than their mature counterparts. 

Research shows that microgreens are sometimes 40x more concentrated in nutrients like beta-carotene and vitamin C, E, and K. Now that’s a reason to add them to your dishes!

Ingredients
  

  • 2-3 figs sliced
  • 1 slice of sourdough toast
  • Vegan cream cheese see notes
  • Microgreens or argulua
  • Agave

Instructions
 

  • Pop your bread in the toaster and toast to your desired level. Slice the figs.
  • Spread the vegan cream cheese on the toast, then place the sliced figs on top. Drizzle over some agave, then top off with tons of microgreens or arugula! (I was light on the greens for photogenic purposes, but pack them on ☺️)
