Healthy Mint Chocolate Chip Smoothie

Mint and chocolate chip are a beloved combination that is often enjoyed in not-so-healthy ways. But in this recipe, that infamous combo makes a green smoothie that you’ll actually want to drink! This healthy mint chocolate chip smoothie is like having dessert for breakfast. Using fresh mint leaves and superfood cacao nibs, this smoothie is a sweet and creamy treat that’s actually good for you!

 

Other mint chocolate chip smoothie or shake recipes often include ingredients like ice cream, milk chocolate chips, and peppermint extract. Not only is this recipe vegan, but it also uses all whole foods. Meaning, instead of the peppermint extract – we use real mint leaves! And instead of milk chocolate – we use the actual cacao bean where chocolate comes from! 

 

Making these swaps means that your smoothie is much more nourishing for your body, and, in my opinion, it tastes a lot better too. 

Cacao Nibs – the Healthy Chocolate

 

If you’ve never heard of cacao nibs before, it’s basically pieces of the actual cacao bean that all chocolate comes from. 

 

 So yes, it tastes like chocolate because it is chocolate! 

 

And did you know that chocolate is actually really healthy? 

 

In fact, cacao nibs are considered to be a superfood because they are rich in essential minerals, such as iron, magnesium, manganese, and copper. They are also very high in antioxidants, which, if you saw my Immune Boosting Super Juice recipe, you know are super important for staying healthy.

 

Before you swap cacao nibs for all your chocolate recipes, keep in mind that cacao nibs are very bitter compared to regular chocolate chips, which are loaded with sugar and milk fat. That’s why a medjool date is added in this recipe which adds natural sweetness to the smoothie and brings out the chocolate flavor. 

 

(Healthy tip: have a medjool date covered with cacao nibs for a chocolate snack that’s super healthy and tastes just like a chocolate bar!)

Ingredients
  

  • ½ cup mint leaves loosely packed
  • 2 tbsp cacao nibs
  • 1 medjool date pitted
  • 1 frozen banana
  • 1 cup spinach
  • ½ cup coconut water
  • ½ cup nondairy milk
  • 3 tbsp hemp seeds optional. for protein

Instructions
 

  • Add all ingredients in a blender and blend until smooth and creamy!
